  • 350g very ripe mangoes, roughly chopped
  • Zest and juice of 1 lime
  • 1 tsp Co-op Fairtrade light brown soft cane sugar
  • 3 medium Co-op British free range egg whites
  • 50g Fairtrade caster sugar
  • 300ml Co-op British double cream


  1. Using a stick blender or food processor, blitz the mango, lime juice and brown soft sugar into a smooth purée
  2. Put a spoonful into the bottom of six medium-sized glasses
  3. Whisk the egg whites until they form stiff peaks, then whisk in the caster sugar a little at a time, to make a glossy mixture
  4. In a separate bowl, whisk the cream until soft peaks form
  5. Fold the cream into the egg whites mixture, followed by the remaining mango purée, leaving a few swirls of fruit
  6. Spoon into the glasses and top with lime zest
  7. Chill for 1 hour, then serve
