Big Bag Option


  • 145g can Co-op tuna chunks in brine, drained well
  • ½ large red pepper, finely diced
  • 1 tbsp capers, drained and chopped, optional
  • 2 tbsp Co-op fresh basil, chopped
  • 100g canned sweetcorn
  • 100g Cathedral City mature cheddar, coarsely grated
  • 2tbsp reduced fat mayonnaise
  • 4 slices Co-op sliced tiger bloomer (60g)
  • 1 tbsp sunflower spread


  1. In a bowl, mix the tuna, pepper, capers, basil, sweetcorn, Cathedral City and mayo, season with black pepper.

  2. Lightly butter each slice of bread with the sunflower spread, then turn two over onto a plate. Divide the filling between the two slices, spread right top the edges. Top with the remaining two slices (buttered side up).

  3. Heat a large frying pan over a low- medium heat. If you want the sandwiches extra oozy place in the microwave for 25 seconds on high each, before putting in the pan.

  4. Cook very gently for 4-5 minutes per side until deep golden. Make sure the heat remains low, so they don’t burn before the cheese has melted. Remove carefully from the pan, slice each in half, and serve.
