Ingredients
- 4 slices Co-op prosciutto crudo
- 80g cous cous, made up according to the instructions on the pack
- 2 tsp Co-op balsamic dressing
- 1/2 pack Co-op Greek feta cheese, crumbled
- 1/3 small cucumber, peeled and diced Handful fresh mint leaves (optional)
- 200g Co-op yellow or Galia melon, peeled, deseeded and sliced
Method
- Heat a dry frying pan over a medium to high heat and fry the prosciutto until it's crisp
- Remove from the pan and set aside
- Fluff the prepared cous cous with a fork then stir through the balsamic dressing and a bit of freshly ground black pepper
- Gently mix in the crumbled feta, cucumber and mint, if using and serve topped with the melon and the crispy prosciutto
