Big Bag Option


  • 1 onion, thinly sliced
  • 1 courgette, thinly sliced and cut into half moons
  • 4 garlic cloves, crushed
  • Zest and juice of 1 lemon
  • 2 tbsp Co-op olive oil
  • 20g Co-op unsalted butter, melted
  • 300g Co-op fusilli pasta
  • 350ml vegetable stock, made with ½ cube
  • 350ml Co-op semi-skimmed milk
  • 2 x 150g packs Co-op cooked king prawns
  • ½ x 25g pack parsley, roughly chopped


  1. Preheat the oven to 180°C/fan 160°C/gas 4
  2. Toss together the onion, courgette, garlic, lemon zest, half the lemon juice, oil and butter in a large, ovenproof dish
  3. Roast for 15 mins, or until the veggies start turning golden
  4. Add the pasta, stock and milk
  5. Stir to combine, and season
  6. Cover with foil and bake for 40 mins, stirring halfway through
  7. Remove from the oven, stir in the prawns and most of the parsley, then bake, uncovered, for another 5 mins
  8. Divide between 4 bowls, spooning over the sauce from the bottom of the dish
  9. Sprinkle with the remaining parsley to serve
