Ingredients
- 1 Co-op ripe and ready to eat avocado
- Juice of 1 lime
- 4 Co-op British free range eggs
- 3 tbsp Co-op semi-skimmed milk
- 15g Co-op unsalted butter
- 2 slices Co-op wholemeal bread
- 2 tomatoes
Method
- Peel and stone the avocado Chop into chunks and cover with lime juice
- Whisk the eggs with milk and season Melt the butter in a nonstick pan, then add the egg and use a wooden spoon to scrape it from the bottom as it cooks When it’s nearly cooked, remove from the heat
- Toast the bread
- Slice the tomatoes and arrange on the toast, then top with the egg and avocado chunks Season, and serve with a dash of hot sauce, if you like
