  • 1 Co-op ripe and ready to eat avocado
  • Juice of 1 lime
  • 4 Co-op British free range eggs
  • 3 tbsp Co-op semi-skimmed milk
  • 15g Co-op unsalted butter
  • 2 slices Co-op wholemeal bread
  • 2 tomatoes


  1. Peel and stone the avocado Chop into chunks and cover with lime juice
  2. Whisk the eggs with milk and season Melt the butter in a nonstick pan, then add the egg and use a wooden spoon to scrape it from the bottom as it cooks When it’s nearly cooked, remove from the heat
  3. Toast the bread
  4. Slice the tomatoes and arrange on the toast, then top with the egg and avocado chunks Season, and serve with a dash of hot sauce, if you like
