Pancetta-wrapped chorizo kebabs with apricot rice


Use pre-prepared pancetta-wrapped chorizo to make these easy kebabs served with a side of fruity rice

  • 170g pack Co-op mini chorizo wrapped in pancetta (in store 12 Dec)
  • 1 red onion, cut into thin wedges
  • 250g pack Co-op microwave wholegrain rice
  • 125g pack Co-op British baby spinach
  • 25g dried apricots, finely chopped


  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Thread the mini chorizo onto skewers, alternating them with the onion wedges
  3. Cook for 10-15 mins, on a baking tray, until golden and crisp
  4. Cook the rice according to the pack instructions
  5. Open the bag of spinach and microwave for 1 minute to wilt
  6. Mix the rice and spinach in a bowl with the apricot
  7. Season, then serve alongside the chorizo kebabs

Top tip: If you’re using wooden skewers, you’ll need to soak them in water for 30 minutes first, so they don’t burn in the oven
