Use pre-prepared pancetta-wrapped chorizo to make these easy kebabs served with a side of fruity rice

Ingredients
- 170g pack Co-op mini chorizo wrapped in pancetta (in store 12 Dec)
- 1 red onion, cut into thin wedges
- 250g pack Co-op microwave wholegrain rice
- 125g pack Co-op British baby spinach
- 25g dried apricots, finely chopped
Method
- Preheat the oven to 200°C/fan 180°C/Gas 6
- Thread the mini chorizo onto skewers, alternating them with the onion wedges
- Cook for 10-15 mins, on a baking tray, until golden and crisp
- Cook the rice according to the pack instructions
- Open the bag of spinach and microwave for 1 minute to wilt
- Mix the rice and spinach in a bowl with the apricot
- Season, then serve alongside the chorizo kebabs
Top tip: If you’re using wooden skewers, you’ll need to soak them in water for 30 minutes first, so they don’t burn in the oven
