  • 250g wholegrain basmati rice
  • ½ jar leftover Co-op Italian green pesto
  • 80g pack Co-op watercress, spinach and rocket salad
  • 2 tbsp pine nuts, toasted
  • 2 tbsp basil leaves, plus extra to serve


  1. Cook the rice according to the pack instructions
  2. Drain well, then stir through the remaining ingredients
  3. Garnish with the extra basil leaves to serve
