- 250g wholegrain basmati rice
- ½ jar leftover Co-op Italian green pesto
- 80g pack Co-op watercress, spinach and rocket salad
- 2 tbsp pine nuts, toasted
- 2 tbsp basil leaves, plus extra to serve
- Cook the rice according to the pack instructions
- Drain well, then stir through the remaining ingredients
- Garnish with the extra basil leaves to serve
