Ingredients
- 30 g Philadelphia Original
- 10 x cherry tomatoes, assorted colours
- 1 tsp olive oil
- cracked black pepper
- 1-2 sprigs fresh mint leaves, optional
- 1 x New York Bakery Co. wholemeal bagel
- 1 x handful baby leaf salad, to serve
- 1 tsp olive oil, to serve
- 1/4 fresh lemon, to serve
Method
- Cut the cherry tomatoes in half and place in a small bowl. Toss with 1 teaspoon of olive oil, season to taste and then set aside until ready to use
- Cut the bagel in half and spread both sides with Philadelphia Original. Next arrange the dressed cherry tomatoes on top, seasoning with black pepper and a small sprinkling of finely chopped mint
- Serve immediately with a side of salad, quickly dressed in a teaspoon of olive oil, a squeeze of fresh lemon and some seasoning, if you like
