A summer salad that is tangy, with pickled nectarine slices that work really well with meat and cheese - try it at your next barbecue

  • 4 tbsp cider vinegar
  • 1 tsp Co-op Fairtrade light brown soft sugar
  • 4 nectarines, sliced
  • 115g pack Co-op baby leaf salad
  • 2 tbsp Co-op extra virgin olive oil
  • 75g pack Co-op Irresistible Parma ham
  • 180g goat’s cheese, crumbled


  1. Whisk together the vinegar and sugar in a bowl, then add the fruit
  2. Leave to pickle for 10 mins, then drain and reserve the liquid
  3. Put the salad leaves in a bowl
  4. Whisk the reserved pickling liquid with the olive oil and season
  5. Drizzle over the salad leaves, then toss through the nectarine slices, Parma ham and goat’s cheese to serve
