
Pickled nectarine, goat’s cheese and Parma ham salad

A summer salad that is tangy, with pickled nectarine slices that work really well with meat and cheese - try it at your next barbecue

Ingredients
- 4 tbsp cider vinegar
- 1 tsp Co-op Fairtrade light brown soft sugar
- 4 nectarines, sliced
- 115g pack Co-op baby leaf salad
- 2 tbsp Co-op extra virgin olive oil
- 75g pack Co-op Irresistible Parma ham
- 180g goat’s cheese, crumbled
Method
- Whisk together the vinegar and sugar in a bowl, then add the fruit
- Leave to pickle for 10 mins, then drain and reserve the liquid
- Put the salad leaves in a bowl
- Whisk the reserved pickling liquid with the olive oil and season
- Drizzle over the salad leaves, then toss through the nectarine slices, Parma ham and goat’s cheese to serve
