Give chicken salad a makeover with creamy goat's cheese and juicy nectarines

Ingredients
- 200g cous cous
- 250ml boiling water
- Juice of 2 limes
- 5 tbsp Co-op honey and mustard dressing
- 1 small Co-op roast chicken
- 70g bag rocket, 1 handful set aside, the rest chopped
- 1/2 cucumber, halved lengthways and thickly sliced
- 6 spring onions, trimmed and sliced
- 3 ripe nectarines, halved, stoned and chopped
- 2 x 65g Co-op soft goat's cheese, crumbled
- 75g walnuts, toasted and roughly chopped
- To serve, try crusty bread
Method
- Put the couscous into a bowl and pour over the boiling water
- Cover the bowl with clingfilm and leave it to stand for about 10 minutes
- Meanwhile, mix the dressing and lime juice with some black pepper
- Then shred the chicken from the bones in large chunks, discarding the skin
- Use a fork to fluff up the couscous, then stir through the chopped rocket and half the dressing
- Tip onto a big platter and then add the shredded chicken, cucumber slices, sliced spring onions, nectarine chunks, reserved rocket leaves and 2/3 of the crumbled goat's cheese and walnuts
- Pour over the remaining dressing and toss the salad together well, then scatter the remaining goat's cheese and walnuts over the top to serve
- Enjoy with plenty of fresh crusty bread
