Ingredients
- 4 Co-op Loved by Us chicken breasts fillets
- 200g green beans, trimmed
- 150g Co-op sweet chilli baby beetroot or pickled beetroot
- 200g cherry tomatoes
- 110g Co-op Loved by Us baby leaf salad
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 100g feta cheese, crumbled (optional)
- 50g pine nuts
Method
- Cook chicken thoroughly following pack instructions
- Allow to cool before cutting the chicken into chunks
- Meanwhile, cut the beans in half and steam until tender
- Dice the beetroot and halve the tomatoes then put into a bowl with the beans and leaves
- Whisk together the oil and lemon juice to make the salad dressing
- Add the chicken and feta, if using, to the bowl, then top with the pine nuts and dressing
