Try this fruity twist on affogato which combines pink grapefruit gin liqueur with a delicious Co-op ice-cream of your choice

Ingredients

  • 25ml Co-op Irresistible pink grapefruit and elderflower gin liqueur
  • Zest and juice of ½ orange
  • 4 scoops (about 40g per scoop) of a Co-op ice-cream of your choice
  • Mint leaves, to garnish

Method

  1. Heat the gin liqueur and orange juice in a pan along with 2 tbsp water until just below boiling
  2. Scoop the ice cream into two bowls, then pour over the gin mixture
  3. Garnish with the orange zest and mint leaves to serve
