
Pitta pizza with courgette salad

Ingredients
- 1 courgette, halved widthways
- 3 tbsp Co-op green pesto
- 2 Co-op pitta breads
- 8 Co-op cherry tomatoes, sliced
- 60g Co-op lighter mozzarella, torn
- 1 tbsp pine nuts
- 70g pack Co-op wild rocket
- 1 tsp Co-op extra virgin olive oil
- Juice of ½ lemon
Method
- Preheat the oven to 200°C/fan 180°C/Gas 6
- Using a vegetable peeler, cut half the courgette into thin ribbons
- Spread the pesto on the pittas, then put them on a baking tray
- Top with the courgette ribbons, tomato slices, mozzarella and pine nuts, then bake for 10 mins, or until the cheese is bubbling
- Meanwhile, coarsely grate the remaining courgette and mix in a bowl with most of the rocket, the olive oil and lemon juice, then season to taste
- Remove the pittas from the oven and season with black pepper, then top with the remaining rocket
- Serve with the courgette salad on the side
