Ingredients

  • 2 tsp Co-op reduced salt dark soy sauce
  • 2 garlic cloves, crushed
  • 1 tbsp Co-op clear honey
  • 300g pack fresh Co-op pineapple chunks, any juices reserved
  • 505g pack Co-op British pork loin steaks, trimmed of fat and cut into 2cm chunks
  • 1 red pepper, cut into chunks
  • 1 tsp Co-op toasted sesame oil
  • 2 tsp Co-op white wine vinegar
  • 1 Co-op cucumber, chopped
  • 1/2 red onion, thinly sliced
  • 40g pomegranate seeds
  • 1 tbsp chopped coriander
  • 100g Co-op 0% fat Greek style natural yogurt
  • 4 Co-op wholemeal pitta breads, halved and toasted
  • You will also need 8 wooden skewers, soaked in cold water

Method

  1. Preheat the grill to high
  2. In a large bowl, mix the soy sauce, garlic, honey and any juices from the pineapple
  3. Season with black pepper, then add the pineapple and pork to the bowl and mix until well coated
  4. Thread alternating chunks of pork, pineapple and pepper onto the skewers Cook under the grill for 8-12 mins, turning halfway through, until the pork is cooked through and beginning to caramelise
  5. Meanwhile, for the salad, mix the sesame oil and vinegar in a bowl
  6. Add the cucumber, red onion and pomegranate seeds
  7. Toss to coat
  8. Stir the coriander through the yogurt and season
  9. Serve the skewers with the cucumber salad, coriander yogurt and toasted pitta breads
