Ingredients
- 1 tsp Co-op toasted sesame oil
- 2 tbsp Co-op Thai green curry paste
- 2 limes, zest of 1 and juice of both
- 230g pack Co-op roast chicken breast fillets, skin discarded
- 3 spring onions, thinly sliced
- 2 Co-op British carrots, coarsely grated
- 1 red pepper, thinly sliced
- 1/2 small red cabbage, shredded
- 1/2 iceberg lettuce, sliced
- Small handful coriander, torn
- 40g pomegranate seeds
- 20g Co-op roasted & salted jumbo cashews, roughly chopped
Method
- In a large bowl, stir together the sesame oil, green curry paste, and lime zest and juice
- Shred the chicken breasts with two forks, then add to the bowl containing the dressing
- Toss to coat
- Add all the vegetables and the coriander to the bowl and mix until everything is well coated
- Serve sprinkled with the pomegranate seeds and cashews
