Ingredients
- 1 tbsp Co-op olive oil
- 1 lemon, zest and juice of half, the rest sliced
- 1⁄2 tsp dried oregano
- 10g fresh basil, shredded
- 1 yellow pepper, chopped 1 courgette, thickly sliced 200g Co-op Irresistible vine
- ripened cherry tomatoes 240g pack Co-op 2 skinless
- cod fillets
- 60g baby spinach
- 2 x 115g bags Co-op baby
- leaf salad
Method
- Preheat the oven to 220°C/fan 200°C/gas 7
- Mix together the olive oil, lemon zest and juice, oregano and most of the basil, then season
- Put the pepper, courgette and tomatoes in a roasting tin and drizzle with a little of the dressing
- Bake in the oven for 10 mins
- Take the tray out and place the cod and lemon slices among the veg
- Spoon the rest of the dressing over the cod
- Cook for 10-12 mins, or until the fish is piping hot in the centre
- Add the spinach, spoon over any pan juices and bake for 1-2 mins more
- Scatter with the remaining basil and serve with the salad leaves
