Big Bag Option


  • 1 tbsp Co-op olive oil
  • 1 lemon, zest and juice of half, the rest sliced
  • 1⁄2 tsp dried oregano
  • 10g fresh basil, shredded
  • 1 yellow pepper, chopped 1 courgette, thickly sliced 200g Co-op Irresistible vine
  • ripened cherry tomatoes 240g pack Co-op 2 skinless
  • cod fillets
  • 60g baby spinach
  • 2 x 115g bags Co-op baby
  • leaf salad


  1. Preheat the oven to 220°C/fan 200°C/gas 7
  2. Mix together the olive oil, lemon zest and juice, oregano and most of the basil, then season
  3. Put the pepper, courgette and tomatoes in a roasting tin and drizzle with a little of the dressing
  4. Bake in the oven for 10 mins
  5. Take the tray out and place the cod and lemon slices among the veg
  6. Spoon the rest of the dressing over the cod
  7. Cook for 10-12 mins, or until the fish is piping hot in the centre
  8. Add the spinach, spoon over any pan juices and bake for 1-2 mins more
  9. Scatter with the remaining basil and serve with the salad leaves
