Ingredients

  • 1 Co-op Medium Free Range Egg
  • 250g pack Co-op asparagus, trimmed
  • 1 bunch Co-op salad onions, trimmed
  • 150g Co-op Cooked King Prawns
  • 2 large slices Co-op Irresistible Sourdough Bloomer
  • 1 tbsp Co-op Extra Virgin Olive Oil
  • 2 Romaine lettuce hearts, washed and chopped
  • 3 tbsp Co-op Caesar Salad Dressing
  • 1 jar Co-op Capers (optional)

Method

  1. Place a pan of water on high heat. When it starts to steam, gently lower in the egg. Bring to boil and reduce heat to medium. After 4 mins, remove and place in cold or iced water. Peel and rinse.
  2. Heat a chargrill pan over a medium-high heat, drizzle the asparagus, salad onions with a little oil and cook and turn every 2 mins until tender and transfer to a plate.
  3. Brush the bread slices with a little oil, and add to the pan, toasting for around 1 min per side.
  4. Place lettuce in a large serving bowl, drizzle over the dressing and toss well. Top with the charred vegetable and prawns. Halve the egg, add and serve.
