Ingredients

  • 2 Co-op Space to Thrive Chicken Breast Fillets
  • 1/2 sachet Co-op Fajita & Taco Seasoning Spice Mix
  • 1 pack Co-op Microwave Wholegrain Rice
  • 200g savoy cabbage, thinly sliced
  • 198g can Co-op Sweetcorn
  • 1½ tbsp olive oil
  • 1 medium avocado, sliced
  • Juice of 2 limes
  • 2 mixed peppers, chopped
  • 2 tomatoes, diced
  • 1 tbsp coriander
  • 1 jar Co-op Pink Pickled Onions (optional)

Method

  1. Put the chicken with half the lime juice and the seasoning in a bowl. Mix well to coat the chicken. Cover and leave to marinate for 15 mins.
  2. Put the remaining lime juice into a bowl, add the cabbage and toss to coat. Season and set aside to soften.
  3. Heat 1 tbsp of the oil in a large frying pan over a high heat. Add the marinated chicken and fry for 3-4 mins, until golden.
  4. Add the pepper and cook for a further 3-4 mins.
  5. Cook the rice according to pack instructions.
  6. Fill each bowl starting with the chicken, pepper, then the cabbage, tomatoes, avocado & sweetcorn.
