Ingredients

  • 1/2 sachet Co-op Fajita & Taco Seasoning Spice Mix
  • 1 tbsp oil, plus extra for brushing
  • Zest and juice of 1 lemon
  • 8 Co-op large field mushrooms
  • 4 Co-op White Pittas
  • Co-op Onion & Garlic Dip (optional)

Method

  1. Preheat the oven to 180°C/Fan 160°C.
  2. In a large bowl, mix the taco seasoning with the oil, lemon zest and juice, add the mushrooms. Toss, coat and marinate for 15 mins.
  3. Take two skewers and slide half the marinated mushrooms onto each. Place on a baking tray and bake for 20 mins, turning halfway.
  4. Change the oven to a high grill setting. Grill for a further 10 mins, turning halfway.
  5. Heat a frying or griddle pan to high and toast the pittas on each side for 1 min. Remove and brush lightly with olive oil.
  6. Season the mushrooms, then serve with the pittas.
