Ingredients
- 1 tsp Co-op olive oil
- 1 onion, finely chopped
- 1/2 red pepper, deseeded and diced
- 1 clove garlic, finely chopped small piece chorizo (about 30g), finely chopped
- Pinch of paprika
- 150g long grain rice
- 600g tub Co-op tomato and basil soup
- 140g pack Co-op jumbo king prawns
- Large handful fresh coriander, chopped (optional)
- Freshly ground black pepper, to serve
Method
- Fry the onion, red pepper, garlic, chorizo and paprika in olive oil for 10 mins
- Add the rice and soup
- Cover and simmer for about 30 mins until the rice is cooked
- A few mins before the rice is cooked add the king prawns
- Scatter over the fresh coriander if you like, and another pinch paprika
- Season with freshly ground black pepper and serve immediately
