  • 1 tsp Co-op olive oil
  • 1 onion, finely chopped
  • 1/2 red pepper, deseeded and diced
  • 1 clove garlic, finely chopped small piece chorizo (about 30g), finely chopped
  • Pinch of paprika
  • 150g long grain rice
  • 600g tub Co-op tomato and basil soup
  • 140g pack Co-op jumbo king prawns
  • Large handful fresh coriander, chopped (optional)
  • Freshly ground black pepper, to serve


  1. Fry the onion, red pepper, garlic, chorizo and paprika in olive oil for 10 mins
  2. Add the rice and soup
  3. Cover and simmer for about 30 mins until the rice is cooked
  4. A few mins before the rice is cooked add the king prawns
  5. Scatter over the fresh coriander if you like, and another pinch paprika
  6. Season with freshly ground black pepper and serve immediately
