  • 1/2 onion, peeled and finely chopped
  • 1/2 red pepper, deseeded and chopped
  • 1 tsp Co-op olive oil
  • Pinch chilli flakes
  • 600g tub Co-op tomato and basil soup
  • 210g can kidney beans, drained and rinsed
  • Co-op garlic and herb croutons (optional)


  1. Gently soften the onion and red pepper in olive oil for about 10 mins
  2. Add the chilli flakes, soup and kidney beans
  3. Warm through, spoon into 2 bowls and top with some Co-op garlic and herb croutons, if you like
