Ingredients
- 1/2 onion, peeled and finely chopped
- 1/2 red pepper, deseeded and chopped
- 1 tsp Co-op olive oil
- Pinch chilli flakes
- 600g tub Co-op tomato and basil soup
- 210g can kidney beans, drained and rinsed
- Co-op garlic and herb croutons (optional)
Method
- Gently soften the onion and red pepper in olive oil for about 10 mins
- Add the chilli flakes, soup and kidney beans
- Warm through, spoon into 2 bowls and top with some Co-op garlic and herb croutons, if you like
