Ingredients

  • 1 onion, finely chopped
  • 2 tbsp vegetable oil
  • 2 cloves garlic, finely chopped
  • 1 inch piece ginger, finely chopped
  • 1 red chilli, finely chopped
  • 1/2 tsp turmeric
  • 1 tsp ground cumin
  • 350g potatoes, peeled and cut into 1-2cm cubes
  • 150ml coconut milk
  • 200g Co-op ready to eat spinach
  • 20g Co-op Indian inspired saag cashews

Method

  1. Heat the oil in a pan and add the onion
  2. Stir in garlic, ginger and chilli, and cook for 2 mins more
  3. Add the spices, stir well and cook for another minute
  4. Add the potatoes, along with 200ml waterCover and simmer until the potatoes are cooked - about 15 mins
  5. Add coconut milk and bring back to a simmer
  6. Stir in the spinach and cashews
  7. Serve sprinkled with another 20g cashews
