Big Bag Option


  • 520g pack boneless Co-op British Chicken thighs, cut into bite-sized pieces
  • ½ tsp Chinese 5 spice powder seasoning
  • 1 tsp garlic paste
  • 2 tsp Co-op vegetable oil
  • 2 mixed peppers, chopped
  • 1 onion, sliced
  • 200g pack Co-op chestnut mushrooms, quartered
  • 150g pack Co-op sugar snap peas
  • 125g pack Co-op baby corn
  • 100ml reduced-sugar tomato ketchup
  • 50ml pineapple juice
  • 1 tsp light soy sauce
  • 2 packs Co-op microwave long grain rice


  1. Season the chicken with black pepper, the 5 spice powder and the garlic paste
  2. Heat 1 tsp of the oil in a large frying pan or wok
  3. Add the chicken pieces a handful at a time and cook for 4-5 mins, until browned all over
  4. Once all the chicken pieces are cooked, set them aside
  5. Wipe the pan with kitchen paper, add the remaining oil and stir-fry the vegetables for 4-5 mins
  6. Return the chicken to the pan and reduce the heat
  7. Mix the ketchup, pineapple juice and soy sauce with 50ml hot water, then add to the pan
  8. Cover and simmer for 5-7 mins
  9. Cook the rice according to the pack instructions and serve with the chicken
