  • 1 tbsp sunflower oil
  • 2 Co-op British chicken breast fillets, chopped
  • 150g Co-op British Brussels sprouts, thinly sliced
  • 2 spring onions, chopped
  • 175g Co-op frozen mixed vegetables
  • 250g pack Co-op Chinese egg fried rice
  • Co-op light soy sauce (optional)


  1. Heat 1 tsp of the oil in a frying pan or wok, and stir fry the chicken on a high heat for 4-5 mins, until just cooked
  2. Set aside and keep warm
  3. Wipe out the pan, add the rest of the oil and stir fry the sprouts and spring onion for 2-3 mins
  4. Add the veg and 2 tbsp water, and stir fry until thawed and softened
  5. Add the rice and another 2 tbsp water, and stir fry for 2-3 mins
  6. Add soy sauce to taste, if using, then return the chicken to the pan to heat through
