Ingredients

  • 1 tbsp Co-op olive oil
  • 4 Co-op British chicken thighs, skinned and diced
  • 1 red pepper
  • 1 chilli, deseeded and sliced
  • 1/2 onion
  • 1/2 cucumber
  • 1 tomato, chopped
  • 227g can pineapple chunks, juice reserved
  • For the sauce:
  • 1/2 tbsp cornflour
  • 1 tbsp cold water
  • 2 tbsp tomato ketchup
  • 1 tbsp Worcester sauce
  • 1 tbsp malt vinegar
  • 1 tbsp brown sugar

Method

  1. Heat 1 tbsp Co-op olive oil in a frying pan
  2. Add 4 Co-op British chicken thighs, skinned and diced, 1 red pepper and 1 chilli, deseeded and sliced, 1/2 onion, 1/2 cucumber and 1 tomato, chopped, and a 227g can pineapple chunks, juice reserved, and fry for 2-3 mins
  3. To make the sauce, mix 1/2 tbsp cornflour and 1 tbsp cold water in a bowl
  4. Add 2 tbsp tomato ketchup, 1 tbsp Worcester sauce, 1 tbsp malt vinegar, 1 tbsp brown sugar and the reserved pineapple juice
  5. Stir and add to the pan. Bring to the boil, cover, and simmer for 30 mins, stirring occasionally
  6. Serve with a 250g pack Co-op microwave rice, cooked according to the pack instructions, and a handful coriander, chopped, if you like
