Ingredients
- Juice of ½ lemon
- 1 tsp Co-op Fairtrade clear honey
- 1 tbsp Co-op extra virgin olive oil
- 70g pack Co-op wild rocket
- 125g pack Co-op British baby spinach
- 1 small red onion, finely sliced
- 100g Co-op British blackberries
- 2 Co-op steamed Scottish salmon fillets
- 25g Co-op Feta
Method
- Make a dressing by mixing the lemon juice, honey and olive oil together in a small jug. Season to taste
- Toss the rocket, spinach, red onion and blackberries together in a large bowl, then flake in the salmon
- Pour over the dressing and gently mix together
- Divide between 2 bowls and crumble over the Feta to serve
