Cherry and goat's cheese salad with herby dressing

  • 2 tbsp Co-op olive oil
  • Pinch dried thyme
  • Zest and juice of 1 lemon
  • 400g Co-op fresh British cherries, destoned and halved
  • One quarter of a red onion, finely sliced
  • 20g bag Co-op watercress, spinach and rocket salad
  • 1 tsp Co-op Dijon mustard
  • 1 tsp Co-op clear honey
  • 2x65g Co-op goat’s cheese, sliced in half


  1. Put the olive oil, thyme and lemon zest in a small pan over a low heat
  2. Gently warm for 2 mins, then set aside to infuse
  3. Put the cherries in a large bowl with the onion slices and salad leaves
  4. Add the lemon juice, mustard and honey to the infused oil and whisk
  5. Season and drizzle half over the salad
  6. Toss gently to coat, then pile onto a large platter
  7. Add the goat’s cheese, drizzle over the remaining dressing and serve
