Ingredients

  • 1 tbsp Co-op olive oil
  • 220g pack Co-op Scottish salmon fillets
  • Freshly ground black pepper
  • 3 Co-op British little gem lettuces, thickly sliced
  • 4 tbsp Co-op Caesar salad dressing
  • 2 anchovies, finely chopped
  • 20g Co-op garlic and herb croutons
  • 50g shelled Co-op British peas

Method

  1. Heat the oil in a nonstick frying pan on a high heat
  2. Season the salmon with black pepper and fry for 2-3 mins on each side
  3. Add the lettuce to a bowl with 3 tbsp of the Caesar dressing, the anchovies, croutons and peas
  4. Mix and arrange in a serving dish
  5. Remove the skin from the fish and flake the fillets over the dish
  6. Drizzle with the rest of the Caesar dressing to serve
