  • 225g Co-op new potatoes, halved, if large
  • 1 red pepper, deseeded and cut into strips
  • 1 leek, trimmed and sliced
  • 1 tbsp Co-op olive oil
  • 220g pack Co-op Scottish salmon fillets
  • 1/2 lemon, sliced
  • Freshly ground black pepper


  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Put the potatoes, red pepper and leek in a small roasting tin
  3. Toss withthe olive oil and roast for 20 mins
  4. Add the salmon, topped with the lemon slices, and bake for 8 more mins
  5. Sprinkle the dish with some freshly ground black pepper before serving
