Forget lobster rolls, this prawn version is less hassle and just as tasty

  • 3 tbsp Co-op mayonnaise
  • 1/2 tsp paprika
  • 3 spring onions, finely chopped
  • Zest of 1 lemon
  • 2 x 140g packs Co-op king prawns
  • 4 Co-op seafood sticks, pulled into strips (optional)
  • 4 hotdog rolls
  • 30g Co-op unsalted butter, melted
  • Serve with freshly ground black pepper and lemon wedges


  1. Combine the mayonnaise, paprika, spring onions and lemon zest in a bowl
  2. Mix in the prawns and seafood sticks, if using, and coat evenly. Set aside
  3. Cut the rolls three quarters of the way through with a bread knife and open up
  4. Brush the melted butter on both cut sides and place on the barbecue for 1-2 mins, until golden
  5. Keep an eye out so they don't burn
  6. Divide the prawn mix between the rolls and serve with black pepper and lemon wedges on the side
