  • Zest and juice of 1/2 lemon
  • 3 tbsp Co-op Thousand Island dressing
  • 1 x 150g pack Co-op king prawns
  • 2 spring onions, finely sliced
  • 2 Co-op ciabattas
  • Drizzle of Co-op extra virgin olive oil
  • 1 baby gem lettuce, shredded
  • 1 Co-op ripe and ready to eat avocado, peeled and sliced
  • Freshly ground black pepper, to season.


  1. Mix the lemon zest, Thousand Island dressing, prawns and spring onions together
  2. Split the ciabattas, toast the cut sides and drizzle with oil
  3. Top the 2 halves with a handful of lettuce, some slices of avocado and a squeeze of lemon juice
  4. Spoon on the prawn cocktail, and finish with a grind of black pepper
