Ingredients
- Zest and juice of 1/2 lemon
- 3 tbsp Co-op Thousand Island dressing
- 1 x 150g pack Co-op king prawns
- 2 spring onions, finely sliced
- 2 Co-op ciabattas
- Drizzle of Co-op extra virgin olive oil
- 1 baby gem lettuce, shredded
- 1 Co-op ripe and ready to eat avocado, peeled and sliced
- Freshly ground black pepper, to season.
Method
- Mix the lemon zest, Thousand Island dressing, prawns and spring onions together
- Split the ciabattas, toast the cut sides and drizzle with oil
- Top the 2 halves with a handful of lettuce, some slices of avocado and a squeeze of lemon juice
- Spoon on the prawn cocktail, and finish with a grind of black pepper
