Juicy mango tastes great with prawns in this Thai-style salad

  • 2 tbsp reduced salt soy sauce
  • 2 tbsp sesame or Co-op olive oil
  • 1 x 250g pack Co-op fresh egg noodles
  • 100g cooked prawns
  • 100g Co-op prepared mango chunks
  • 1 red pepper, thinly sliced
  • 2 tbsp chopped cashews
  • Handful fresh mint


  1. Divide 1 tbsp soy sauce and oil between 2 jars
  2. Cook the noodles according to the pack instructions
  3. Leave to cool, and divide between the jars
  4. Top each jar with the prawns, half of the mango chunks, half of the sliced pepper and 1 tbsp chopped cashews
  5. Sprinkle over a small handful of roughly chopped fresh mint, if you like
