Juicy mango tastes great with prawns in this Thai-style salad

Ingredients
- 2 tbsp reduced salt soy sauce
- 2 tbsp sesame or Co-op olive oil
- 1 x 250g pack Co-op fresh egg noodles
- 100g cooked prawns
- 100g Co-op prepared mango chunks
- 1 red pepper, thinly sliced
- 2 tbsp chopped cashews
- Handful fresh mint
Method
- Divide 1 tbsp soy sauce and oil between 2 jars
- Cook the noodles according to the pack instructions
- Leave to cool, and divide between the jars
- Top each jar with the prawns, half of the mango chunks, half of the sliced pepper and 1 tbsp chopped cashews
- Sprinkle over a small handful of roughly chopped fresh mint, if you like
