  • 300g short pasta such as rigatoni
  • 1 tbsp rapeseed oil
  • 1 clove garlic, sliced
  • 100g Brussels sprouts, sliced
  • 100g Tenderstem® broccoli, sliced
  • 60g fine beans, trimmed and halved
  • 60g Co-op frozen British garden peas
  • 100ml Co-op single cream
  • Zest of ½ lemon
  • 2 tbsp finely chopped chives, plus extra to garnish
  • 100g Co-op Irresistible beech & oak smoked Scottish smoked salmon


  1. Cook the pasta according to the pack instructions
  2. When the pasta is cooked, drain, reserving a mugful of the cooking water
  3. Heat the oil in another saucepan and cook the garlic, sprouts, broccoli, fine beans and peas over a medium heat for 5-6 mins, until beginning to soften
  4. Add a splash of the pasta water and the cream, and heat until simmering
  5. Stir through the lemon zest, chives and smoked salmon, then add the pasta to the pan
  6. Stir to coat, adding a splash more pasta water to loosen if necessary
  7. Season with black pepper, then serve sprinkled with the extra chives
