Smoked salmon bruschetta

  • 200g Co-op light soft cheese
  • 1 tsp mixed herbs
  • Zest of 1 lemon
  • 1 Co-op French white baguette, cut into 16 slices
  • 1 1/2 x 100g packs Co-op Scottish smoked salmon, cut into 16 strips
  • Freshly ground black pepper, to season
  • Squeeze of lemon juice and sprig of fresh dill, to serve (optional)


  1. Empty the soft cheese into a bowl and beat with the mixed herbs, lemon zest and some freshly ground black pepper
  2. Grill the bread slices for 2 mins, until golden
  3. Turn over and toast the other side
  4. Spread the cheese mix over the top of the toasted slices
  5. Curl each smoked salmon strip over the top of the cream cheese mix
  6. Top with a squeeze of lemon juice and a sprig of fresh dill, if you like
