
Smoked salmon bruschetta

Ingredients
- 200g Co-op light soft cheese
- 1 tsp mixed herbs
- Zest of 1 lemon
- 1 Co-op French white baguette, cut into 16 slices
- 1 1/2 x 100g packs Co-op Scottish smoked salmon, cut into 16 strips
- Freshly ground black pepper, to season
- Squeeze of lemon juice and sprig of fresh dill, to serve (optional)
Method
- Empty the soft cheese into a bowl and beat with the mixed herbs, lemon zest and some freshly ground black pepper
- Grill the bread slices for 2 mins, until golden
- Turn over and toast the other side
- Spread the cheese mix over the top of the toasted slices
- Curl each smoked salmon strip over the top of the cream cheese mix
- Top with a squeeze of lemon juice and a sprig of fresh dill, if you like
