  • 1 tsp Co-op olive oil
  • 4 Co-op pork sausages
  • 1/4 x 225g Co-op chorizo ring, diced
  • 2 cloves garlic, finely chopped
  • 1 tsp smoked paprika
  • 400g can Co-op chopped tomatoes
  • 150ml chicken stock
  • 400g can butter beans, drained
  • 100g frozen peas
  • 1 tbsp flat leaf parsley, finely chopped, or 1 tsp dried
  • Freshly ground black pepper


  1. Heat the oil in a nonstick frying pan and cook the sausages for 6 - 8 mins, turning regularly, until browned on all sides
  2. Remove from the pan and set aside
  3. Add the chorizo to the pan and cook for 2 mins
  4. Add the garlic and smoked paprika and cook for a further 3 mins
  5. Pour in the chopped tomatoes and chicken stock, and season with freshly ground black pepper
  6. Bring to a simmer
  7. Add the sausages to the pan and continue to cook for a further 10 - 12 mins
  8. Stir through the butter beans and peas
  9. Cook for another 2 mins, then serve in bowls sprinkled with parsley
