Ingredients
- 2 tbsp tikka masala paste
- 50g Co-op natural yogurt
- 1 tsp fresh ginger, grated
- 1 clove garlic, crushed
- Pinch of chilli powder
- 2 Co-op British chicken breasts
- 3 tsp Co-op olive oil
- 150g Co-op basmati rice
- 4 Co-op piccolo tomatoes, chopped
- 8cm chunk cucumber, chopped
- 1 red onion, chopped
- Lemon wedges and chopped fresh coriander, to serve (optional)
Method
- In a bowl, mix the tikka masala paste, yogurt, ginger, garlic, and chilli powder
- Stir together and season with freshly ground black pepper
- Add the chicken breasts and coat well in the marinade
- Heat 2 tsp olive oil in a griddle pan until hot
- Add the chicken breasts and cook on one side over a medium heat for 15 mins
- Remove the chicken breasts and wipe the pan with kitchen paper
- Add 1 tsp olive oil to the pan and cook the other side of the chicken for a further 10 mins
- Meanwhile, cook the rice according to the pack instructions
- Make a salad with the tomatoes, cucumber and red onion
- Slice each chicken breast and arrange on 2 plates with the rice and salad
- Serve with lemon wedges and sprinkle with chopped fresh coriander, if you like
