  • 2 tsp Co-op olive oil
  • 1 red onion, finely chopped
  • 1 yellow pepper, finely diced
  • 500g pack Co-op 5% fat British beef mince
  • 250g Co-op Italian passata
  • 1 tbsp mild chilli powder
  • 1 tsp Co-op Fairtrade light brown soft cane sugar
  • 2 tsp malt vinegar
  • 6 wholemeal rolls, split
  • 1 little gem lettuce, leaves picked
  • 40g Co-op lighter mature cheese, grated
  • 2 x 100g bags Co-op mixed leaf salad
  • 6 Co-op Irresistible vine ripened cherry tomatoes, quartered
  • 1 large Co-op British carrot, grated
  • 1/2 Co-op cucumber, chopped


  1. Heat the oil in a large frying pan over a medium heat
  2. Cook the onion and pepper for 3-4 mins, until just softened
  3. Add the mince, breaking it up with a wooden spoon
  4. Increase the heat to high and cook for a further 5 mins
  5. Stir in the passata, chilli powder, sugar and vinegar and cook over a medium-high heat for 10 mins, stirring frequently, until reduced
  6. and thickened
  7. Season to taste
  8. Fill each roll with a lettuce leaf, some of the mince mixture and some grated cheese
  9. Serve with the remaining lettuce leaves, mixed leaf salad, tomatoes, carrot and cucumber on the side
