  • 2 tbsp Co-op vegetable oil
  • 2 tbsp chilli sauce
  • 1 tsp Dijon mustard
  • ¼ tsp dried oregano
  • 1 Co-op British cauliflower, separated into small florets
  • 1 red onion, sliced
  • 1 orange pepper, sliced
  • 1 avocado, mashed
  • 6 tbsp dairy free yogurt alternative
  • Juice of 1 lemon
  • 1 little gem lettuce, shredded
  • ½ x 330g pack Co-op cherry tomatoes, cut into quarters
  • 1 carrot, peeled into ribbons
  • 4 Co-op wholemeal pittas, halved


  1. Preheat the oven to 220°C/fan 200°C/gas 7
  2. Mix the oil with the chilli sauce, mustard and oregano. Toss with the cauliflower, onion and pepper
  3. Spread out on a lined baking tray and roast for 20 mins, until tender and golden
  4. Whizz together the avocado, yogurt alternative and lemon juice to make a sauce
  5. Toss the little gem, tomato and carrot together to make a simple salad
  6. Toast the pittas and stuff with the roasted vegetables, then drizzle over the avocado sauce and serve with the salad
