Ingredients
- 2 tbsp Co-op vegetable oil
- 2 tbsp chilli sauce
- 1 tsp Dijon mustard
- ¼ tsp dried oregano
- 1 Co-op British cauliflower, separated into small florets
- 1 red onion, sliced
- 1 orange pepper, sliced
- 1 avocado, mashed
- 6 tbsp dairy free yogurt alternative
- Juice of 1 lemon
- 1 little gem lettuce, shredded
- ½ x 330g pack Co-op cherry tomatoes, cut into quarters
- 1 carrot, peeled into ribbons
- 4 Co-op wholemeal pittas, halved
Method
- Preheat the oven to 220°C/fan 200°C/gas 7
- Mix the oil with the chilli sauce, mustard and oregano. Toss with the cauliflower, onion and pepper
- Spread out on a lined baking tray and roast for 20 mins, until tender and golden
- Whizz together the avocado, yogurt alternative and lemon juice to make a sauce
- Toss the little gem, tomato and carrot together to make a simple salad
- Toast the pittas and stuff with the roasted vegetables, then drizzle over the avocado sauce and serve with the salad
