Spicy chickpea tacos


Roasted chickpeas are the ultimate filling for vegan tacos

  • 1 x 400g can chickpeas
  • 1 yellow pepper, deseeded and sliced
  • 10 Co-op piccolo tomatoes, halved
  • 1 medium red onion
  • 2 tbsp spicy seasoning of your choice
  • 1 tbsp Co-op olive oil
  • 2 little gem lettuces, finely shredded
  • 1 Co-op ripe and ready to eat avocado, peeled and sliced
  • 4 tbsp Co-op mild salsa


  1. Preheat the oven to 220C/fan 200C/Gas 7
  2. Put the chickpeas, drained and patted dry, sliced pepper, tomatoes and the red onion, cut into thin wedges, on a baking tray
  3. Add the spicy seasoning and olive oil and toss together. Bake for 20 mins, turning halfway through
  4. Add 4 taco shells for the last 3-4 mins, baking until crisp
  5. To build your tacos, fill the shells with shredded lettuce, add a few spoonfuls of veg, and top each taco with sliced avocado
  6. Finish with a spoon of salsa and a squeeze of fresh lime juice
