Spicy chicken with herby roast potatoes

Ingredients

  • 2 Co-op British chicken breasts
  • 2 tsp Co-op olive oil
  • Pinch paprika
  • Pinch chilli flakes
  • 300g Co-op baby potatoes, halved or quartered
  • 80g green beans
  • Handful flat leaf parsley, chopped
  • 1 lemon, cut into wedges

Method

  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Make 3 slashes across the top of each chicken breast, then rub with half the oil, the paprika and the chilli flakes
  3. Season and put in a roasting tin
  4. Toss the potatoes in the remaining oil and add to the tin, tucking them in around the chicken
  5. Roast for 40 mins, until the chicken is cooked through and the potatoes are crispy and golden
  6. Meanwhile, cook the beans in a pan of boiling water for 5 mins, then drain and toss with the chicken and potatoes
  7. Add the lemon wedges, scatter with the parsley and serve.
