A classic steak sandwich with a spicy twist

Ingredients
- 2 Co-op British sirloin steaks
- 500g chips or fries
- 1 red onion, peeled and sliced
- 2 tbsp Co-op olive oil
- 300g cherry tomatoes, larger ones halved
- 6 tbsp tomato and chilli chutney
- 4 small ciabattas
- 4 tbsp mayonnaise
- 2 handfuls rocket
Method
- Halve each sirloin steak lengthways to make 4 steaks
- Use a rolling pin to flatten them out
- Cook the chips or fries according to the pack instructions
- Fry the onion in 1 tbsp of the oil in a small pan, until softened
- Add the tomatoes and chutney then increase the heat and bubble for a few minutes, stirring until the tomatoes are soft, but not falling apart
- Turn off the heat, leaving the tomatoes and onions in the pan to stay warm
- Heat a griddle pan, and toast both sides of the ciabattas
- Brush the steaks with the remaining oil, season, then griddle for 1-3 mins on each side
- Spread each ciabatta with 1 tbsp of mayonnaise
- Add some rocket, a steak and the tomatoes and onions
- Top with the ciabatta lids and serve with chips or fries
