  • 2 Co-op British sirloin steaks
  • 500g chips or fries
  • 1 red onion, peeled and sliced
  • 2 tbsp Co-op olive oil
  • 300g cherry tomatoes, larger ones halved
  • 6 tbsp tomato and chilli chutney
  • 4 small ciabattas
  • 4 tbsp mayonnaise
  • 2 handfuls rocket

  1. Halve each sirloin steak lengthways to make 4 steaks
  2. Use a rolling pin to flatten them out
  3. Cook the chips or fries according to the pack instructions
  4. Fry the onion in 1 tbsp of the oil in a small pan, until softened
  5. Add the tomatoes and chutney then increase the heat and bubble for a few minutes, stirring until the tomatoes are soft, but not falling apart
  6. Turn off the heat, leaving the tomatoes and onions in the pan to stay warm
  7. Heat a griddle pan, and toast both sides of the ciabattas
  8. Brush the steaks with the remaining oil, season, then griddle for 1-3 mins on each side
  9. Spread each ciabatta with 1 tbsp of mayonnaise
  10. Add some rocket, a steak and the tomatoes and onions
  11. Top with the ciabatta lids and serve with chips or fries
