Open peppered steak sandwich

  • 1 x 300g Co-op rump steak, at room temperature
  • 1 tsp coarsely ground black pepper
  • 1 tbsp Co-op olive oil
  • 1 clove garlic
  • 1 medium Co-op ciabatta, cut in half lengthways
  • 1 little gem lettuce, shredded
  • 3 tbsp Co-op salsa
  • Serve with jalapeño chilli slices, chopped fresh coriander and lime wedges (optional)


  1. Pat the steak dry with kitchen towel and sprinkle with pepper on both sides
  2. Heat 1/2 tbsp olive oil in a heavy frying pan over a high heat
  3. Cook the steak for 3-4 mins on each side for medium, or slightly longer if you prefer it well done
  4. Remove the steak from the pan, cover with foil, and set aside to rest
  5. Preheat the grill to medium
  6. Cut the garlic clove in half and rub it over the cut side of each piece of ciabatta
  7. Drizzle the remaining olive oil over each slice and place under the grill for 2-3 mins, until golden
  8. Top each piece of ciabatta with the shredded lettuce
  9. Slice the steak, and divide between the 2 halves
  10. Spoon over the salsa and top with jalapeño slices and fresh coriander, if using
  11. Serve immediately, with lime wedges on the side, if you like
