Ingredients
- 1 x 300g Co-op rump steak, at room temperature
- 1 tsp coarsely ground black pepper
- 1 tbsp Co-op olive oil
- 1 clove garlic
- 1 medium Co-op ciabatta, cut in half lengthways
- 1 little gem lettuce, shredded
- 3 tbsp Co-op salsa
- Serve with jalapeño chilli slices, chopped fresh coriander and lime wedges (optional)
Method
- Pat the steak dry with kitchen towel and sprinkle with pepper on both sides
- Heat 1/2 tbsp olive oil in a heavy frying pan over a high heat
- Cook the steak for 3-4 mins on each side for medium, or slightly longer if you prefer it well done
- Remove the steak from the pan, cover with foil, and set aside to rest
- Preheat the grill to medium
- Cut the garlic clove in half and rub it over the cut side of each piece of ciabatta
- Drizzle the remaining olive oil over each slice and place under the grill for 2-3 mins, until golden
- Top each piece of ciabatta with the shredded lettuce
- Slice the steak, and divide between the 2 halves
- Spoon over the salsa and top with jalapeño slices and fresh coriander, if using
- Serve immediately, with lime wedges on the side, if you like
