Ingredients
- 2 x Co-op sirloin steaks
- 150g piece of swede, thinly sliced
- 2 parsnips, trimmed and thinly sliced
- 1 red onion, peeled and cut into 6 wedges
- 3 tbsp sunflower oil
- 1 tbsp Co-op balsamic vinegar
- 1 rounded tsp Co-op coarse grain mustard
- 1 tsp Co-op runny honey
- Freshly ground black pepper
- 60g Co-op mixed leaf salad
Method
- Preheat the oven to 220C/fan 200C/Gas 7
- Get the steaks out of the fridge and set aside
- Put the swede, parsnips and red onion on a baking tray
- Add 1 tbsp oil and toss to coat all the veg. Spread evenly and cook for 20-25 mins until tender and starting to brown, giving them a shuffle halfway through
- Meanwhile, rub 1 tsp oil on both sides of the steaks. Whisk the remaining oil in a bowl with the balsamic vinegar, mustard and honey and season with black pepper
- Cook the steaks in a non-stick frying pan for about 2 mins on each side, or until cooked to your liking. Put on a warm plate, cover loosely with foil and rest for 5 mins
- Slice the steak thinly, trimming off any fat
- Arrange the salad leaves on 2 plates and top with the steak
- Serve with the root veg and drizzle with the mustard dressing
