- 1 tbsp Co-op olive oil
- 1 red onion, finely chopped
- 3 cloves garlic, finely chopped
- 1 red chilli, finely chopped
- 500g Co-op piccolo tomatoes, chopped
- 1 tbsp Co-op red wine vinegar
- Heat the olive oil in a frying pan
- Add the onion, garlic and chilli
- Cook for 5-10 mins until softened
- Add the tomatoes and red wine vinegar, and cook for 15-20 mins, until the tomatoes have broken down, adding a little water if sticking
- Serve drizzled with hot sauce for an extra kick, if you like
