
Spinach, salami and blue cheese pizza

This white pizza makes a change from traditional margherita, and it's really tasty too

Ingredients
- 350g strong white bread flour, plus extra for dusting
- 7g sachet dried yeast
- 2 tbsp Co-op olive oil
- 1 1/2 tbsp Co-op garlic oil
- 60g baby spinach
- 4 slices salami
- 45g Co-op Irresistible Stilton
Method
- Put the flour in a bowl and sprinkle over the yeast
- Make a well in the middle and pour in the oil and 200ml warm water
- Stir together then tip onto a floured surface
- Knead for about 5 mins until smooth then put into a clean bowl, cover and leave until it's doubled in size (this will take about 1 hour)
- Take the dough out of the bowl and divide into 3 pieces
- Roll each one into a 20cm circle
- Heat a large ovenproof, nonstick frying pan over a high heat
- Lower the heat to medium and carefully put a circle of dough in the pan
- Cook the base for 4 mins until golden brown
- Preheat the grill. Brush a cooked pizza base with about the garlic oil (or rub with the cut side of 1 clove garlic and brush with some Co-op olive oil)
- Scatter over the baby spinach, then the salami slices
- Sprinkle over Stilton
- Grill for 5 mins or until golden and bubbling
- Add some freshly ground black pepper and serve
