It’s Saint Patrick’s Day on 17 March so why not have a crack at this super tasty Irish classic

  • 750g potatoes
  • 4 Co-op streaky bacon rashers
  • 250g bag Co-op sliced spring greens
  • 1 tbsp Co-op unsalted butter
  • 4 Co-op British eggs


  1. Peel the potatoes and cut into chunks
  2. Boil for 15 mins, or until tender, then drain
  3. Chop and fry the bacon rashers until golden
  4. Add the sliced spring greens and fry for a few more mins until wilted
  5. Mash the potatoes with butter, season with freshly ground black pepper and stir in the bacon and spring greens
  6. Serve each with a Co-op British egg, poached, and some more black pepper
