  • 2 tbsp Co-op vegetable oil, plus 1 tsp
  • 30g Co-op walnuts, roughly chopped
  • 1 tbsp Co-op red wine vinegar
  • 1 tsp Co-op English mustard
  • 2 tsp drained jarred capers, chopped
  • 1 Cox apple, cored and finely sliced
  • 115g bag Co-op babyleaf salad
  • 50g Co-op Irresistible blue Stilton®, crumbled


  1. Heat 1 tsp of the oil in a frying pan over a medium heat, add the nuts and cook for about 3-4 mins, stirring often, until toasted and fragrant, then set aside
  2. Whisk the remaining oil in a large bowl with the vinegar, mustard and capers, then season and stir in the nuts
  3. Toss through the apple, salad and cheese, and serve immediately
