Ingredients
- 2 tbsp Co-op vegetable oil, plus 1 tsp
- 30g Co-op walnuts, roughly chopped
- 1 tbsp Co-op red wine vinegar
- 1 tsp Co-op English mustard
- 2 tsp drained jarred capers, chopped
- 1 Cox apple, cored and finely sliced
- 115g bag Co-op babyleaf salad
- 50g Co-op Irresistible blue Stilton®, crumbled
Method
- Heat 1 tsp of the oil in a frying pan over a medium heat, add the nuts and cook for about 3-4 mins, stirring often, until toasted and fragrant, then set aside
- Whisk the remaining oil in a large bowl with the vinegar, mustard and capers, then season and stir in the nuts
- Toss through the apple, salad and cheese, and serve immediately
