  • 2 Co-op chicken breasts
  • 60g Co-op mozzarella
  • 2 sage leaves, or a couple of pinches dried oregano
  • 4 slices Co-op prosciutto
  • 2 tbsp Co-op olive oil
  • 2 potatoes, peeled and cut into 2cm cubes
  • 1 courgette, trimmed and diced


  1. Preheat the oven to 200C/fan 180C/Gas 6
  2. Cut a horizontal slit along the side of each chicken breast to make a pocket
  3. Fill each one with 30g Co-op mozzarella, and a sage leaf or a pinch dried oregano
  4. Wrap each chicken breast in a slice of prosciutto
  5. Pour the olive oil into a roasting tin and heat in the oven, then add the chicken and veg and roast for 25-30 mins, stirring the veg once
