
Stuffed chicken breasts

Ingredients
- 2 Co-op chicken breasts
- 60g Co-op mozzarella
- 2 sage leaves, or a couple of pinches dried oregano
- 4 slices Co-op prosciutto
- 2 tbsp Co-op olive oil
- 2 potatoes, peeled and cut into 2cm cubes
- 1 courgette, trimmed and diced
Method
- Preheat the oven to 200C/fan 180C/Gas 6
- Cut a horizontal slit along the side of each chicken breast to make a pocket
- Fill each one with 30g Co-op mozzarella, and a sage leaf or a pinch dried oregano
- Wrap each chicken breast in a slice of prosciutto
- Pour the olive oil into a roasting tin and heat in the oven, then add the chicken and veg and roast for 25-30 mins, stirring the veg once
