Ingredients
- 400g can chickpeas
- 2 tbsp lemon juice
- 1 clove garlic, crushed
- 1 tbsp peanut butter
- 2 tsp green food colouring
- 1 tbsp Co-op olive oil
Method
- Blend the chickpeas, drained, with the lemon juice, garlic, peanut butter and the food colouring
- Add 4 tbsp water and blitz until smooth
- Stir in the olive oil and spoon into a bowl Garnish with some flat leaf parsley, if you like
