Ingredients

  • 100g leftover mashed sweet potato
  • 100g Co-op Italian Ricotta
  • 1tbsp chopped fresh chives
  • 1btsp chopped fresh parsley
  • Pinch smoked paprika
  • 4 bagels, halved and toasted

Method

  1. Stir together the sweet potato, ricotta and herbs until well combined
  2. Season well and add the smoked paprika
  3. Spread onto the bagel halves before serving
